    Eucalyptus honey is one of the most recognisable honey varieties due to its unique colour, aroma and medium-sweet, distinctive herbal flavour. It has a hint of menthol, and a sweetness that some people identify as caramel, while others say it's more like butterscotch. It contains no added sweeteners or artificial ingredients. Ours is 100% authentic, raw and unfiltered, and is a great alternative to refined sugar. Use it to add a sweet, slightly herbal flavour to tea, baked goods, porridge and desserts. No wonder it is the favourite of many!

    WHY RAW?
    Raw honey is honey as it exists in the hive. It is extracted, filtered and poured straight into the jar. Conventional honey usually undergoes heating and pressure processing, which may make it less nutritious and reduce its antioxidant levels. Raw honey, on the other hand, is not refined, pasteurised or otherwise processed in any way, retaining most of the beneficial nutrients and antioxidants that honey naturally contains. It also contains pollen and propolis, and does not contain any added sugars or sweeteners, which are often present in commercial honey.

    WHY DOES HONEY CRYSTALLISE?
    It is a natural process for raw honey to crystallise. When the temperature drops below 10ºC, the natural sugars (glucose and fructose) in honey bind together and form sugar crystals. Pollen also contributes to this binding process.

    STORAGE

    Once opened, store in a cool, dry place. As this is a natural product, colour, texture and flavour may vary. The honey may darken over time and the flavour may intensify, but it will be safe to consume indefinitely.
