Fresh, choice-grade Italian plum tomatoes are picked, sliced and dried to create this convenient pantry staple. No preservatives, sulphites or oils are added. Labelled as a vegatable for nutritional purposes, tomatoes are a great source of vitamin C and the phytochemical lycopene, a powerful antioxidant that also gives tomatoes their distinctive red colour. Add small dried pieces to fresh salads, savoury breads, biscuits or baked goods. Rehydrated, these tomato slices make a flavoursome addition to pizzas, pastas, soups, stews, sauces, dips and more.
HOW TO USE DRIED TOMATOES:
• To rehydrate, cover completely with boiling water and soak for 30 minutes or until soft and pliable, then drain excess water and use like fresh tomatoes in cooking.
• If your recipe contains liquid (stews, soups, curries or sauces) just add the dried tomatoes when you add the liquid and let them rehydrate slowly while cooking.
• To make tomatoes in oil, you will have to rehydrate them first. Simply rehydrate the tomatoes as directed above, then drain and mix with olive oil, garlic and fresh basil and marinate overnight.
