    This beautifully fragrant honey is produced in beehives nestled amongst the indigenous fynbos of the Western Cape. It is ethically farmed and has a rich, amber colour, with a unique wildflower taste. Raw honey is an alkaline-forming food loaded with vitamins, antioxidants, and enzymes, which strengthen the immune system and can reduce allergies. Plus, it has anti-viral, anti-bacterial, and anti-fungal properties, making it a popular home remedy for skin wounds and infections, and for soothing a sore throat. This pure, raw, unheated, untreated honey is truly one of our local treasures. Use as a sugar alternative to sweeten porridge and tea. Serve with yoghurt, scones, waffles, muffins or simply on a piece of bread or buttered toast.

    WHY RAW?
    Raw honey is honey as it exists in the hive. It is extracted, filtered and poured straight into the jar. Conventional honey usually undergoes heating and pressure processing, which may make it less nutritious and reduce its antioxidant levels. Raw honey, on the other hand, is not refined, pasteurised or otherwise processed in any way, retaining most of the beneficial nutrients and antioxidants that honey naturally contains. It also contains pollen and propolis, and does not contain any added sugars or sweeteners, which are often present in commercial honey.

    WHY DOES HONEY CRYSTALLISE?
    It is a natural process for raw honey to crystallise. When the temperature drops below 10ºC, the natural sugars (glucose and fructose) in honey bind together and form sugar crystals. Pollen also contributes to this binding process.
