Creamy Roasted Butternut & Cashew Soup
Serves 4
Ingredients
- 1 medium butternut
- ¾ cup By Nature Raw Cashews
- 3 garlic cloves
- 1 celery stalk, sliced
- 1 tsp fresh ginger, grated
- 1 tbsp ground coriander
- 600 ml vegetable stock or water
- 1 tsp sea salt
- Fresh parsley, toasted coconut flakes and extra roasted cashews, to serve
- Preheat the oven to 220°C.
- Halve the butternut, remove the seeds and roast cut-side down for 45–60 minutes, until tender. Roast the cashews and garlic cloves (skin on) for the last 15 minutes.
- Add the celery, ginger, coriander, stock and salt to a saucepan and bring to a gentle simmer.
- Scoop the roasted butternut from its skin, squeeze the garlic from its skins, then add both to the saucepan along with the roasted cashews. Simmer for 10–15 minutes.
- Blend until silky smooth. Adjust the consistency with a little extra stock if needed.
- Serve topped with toasted coconut flakes, roasted cashews and fresh parsley.
For an extra layer of flavour, finish with a drizzle of olive oil and a pinch of cracked black pepper.
